zucchini fritters:
1. Coarsely grate the zucchini and squeeze out as much liquid as possible in your hands.
2. Combine the zucchini with the spring onion, haloumi, flour, eggs and dill, and season well with salt and freshly ground black pepper.
3. Heat the oil in a large, heavy-based, preferably non-stick pan, form fritters from the mixture (by using heaped teaspoons full of the mixture for each fritter), and cook in batches for 2 minutes each side, or until golden and firm; and drain on paper kitchen towels.
4. Cut each slice of lemon into quarters or eighths, depending on the size of the lemons, so that one piece can be placed as a triangle on top of each fritter.
5. Top each fritter with 1/2 a teaspoon of yoghurt, a triangular-shaped piece of lemon and a small sprig of dill.

"Pancakes:

Separate three eggs.
Beat Yolks
Add 1 cup of flour
1 1/2 teaspoons baking powder
A pinch of salt
A teaspoon of sugar
A tablespoon of melted butter (not too hot)
A scant cup of milk
Mix very gently so the flour doesn't get tough
Fold in beaten egg whites (half reasonably well, the second half lightly)
Cook (put a bit of butter in a frying pan. It should be fairly hot so butter
slightly sizzles. Wipe it out with paper towel. Do this between each batch.

apple crisp:

* 10 cups all-purpose apples, peeled, cored and sliced
    * 1 cup white sugar
    * 1 tablespoon all-purpose flour
    * 1 teaspoon ground cinnamon
    * 1/2 cup water
    *  
    * 1 cup quick-cooking oats
    * 1 cup all-purpose flour
    * 1 cup packed brown sugar
    * 1/4 teaspoon baking powder
    * 1/4 teaspoon baking soda
    * 1/2 cup butter, melted

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degree C).
   2. Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
   3. Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
   4. Bake at 350 degrees F (175 degrees C) for about 45 minutes.

Curry-Coconut Sauce
Real Simple

This recipe goes with Curry-Coconut Chicken

2 tablespoons olive oil
1 teaspoon crushed red pepper flakes
 Zest of 1 lemon
1 1/2 tablespoons minced garlic
1 to 1 1/2 tablespoons curry powder
1 1/4 cups light coconut milk
2 tablespoons soy sauce
2 teaspoons sugar, or to taste
1/2 teaspoon salt, or to taste
1/2 cup chopped fresh basil leaves

Heat a wok or skillet over medium-high heat. Add the oil and heat until hot for 30 seconds. Add the pepper flakes, lemon zest, garlic, and curry powder and stir-fry until fragrant, about 15 seconds. Add the coconut milk, soy sauce, sugar, and salt and cook, stirring occasionally, until the sauce thickens slightly, about 1 1/2 minutes. Add the basil. Pour into a bowl.

Yield: Makes 4 servings

honey bran muffins:
1 cup bran
1 cup milk
1/4 cup honey
1 large egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/2 teaspoon baking powder

1. Grease bottom of 12 muffin cup.
   2. In a medium bowl blend bran with milk; allow to sit for 5 minutes.
   3. In a small bowl add honey, egg, and oil; stir until mixed. Add flour and baking powder to honey mixture. Then fold into the bran mixture. Stir just till moistened. Spoon into a greased muffin tin.
   4. Bake in a 350?F oven for 25 to 30 minutes or until done.

Makes 1 dozen muffins.

Potatoes Au Gratin

INGREDIENTS:

* 2 to 2 1/2 pounds red-skinned potatoes
    * 2 tablespoons butter
    * 1/2 cup diced onion
    * 2 small cloves garlic, minced
    * 1 tablespoon fresh chopped parsley
    * 2 tablespoons flour
    * 1/4 teaspoon pepper
    * 1 1/2 cups milk
    * 1 cup shredded sharp Cheddar cheese
    * salt and pepper, to taste

PREPARATION:
Peel potatoes and slice thinly. Rinse and cover with water in a medium saucepan. Bring to a boil; boil for 2 minutes. Drain and rinse with cold water to stop cooking.

In a saucepan, melt butter over medium-low heat.

Add the diced onion and saute until tender; add minced garlic and parsley. Stir in flour and pepper until smooth. Gradually add milk, cooking and stirring over medium-low heat until thickened. Stir in cheese until melted and sauce is smooth.

Arrange sliced potatoes in a 2 to 2 1/2-quart casserole, sprinkling layers with salt and pepper. Pour sauce evenly over potatoes. Cover dish and cook at 350 for 40 to 50 minutes, or until potatoes are tender.
Serves 4 to 6.
